“Mom, can you put this in my lunch box?” My youngest son just loves this cauliflower! And so do I!
Nutritional yeast is a complete source of protein; 2 tbsp. of nutritional yeast contains 9 grams of protein, as well as fiber, vitamin B12, and an array of other nutrients.
1 large head of cauliflower
1 tbsp. coconut oil (melted)
3 tbsp. nutritional yeast
Pink sea salt & freshly ground pepper to taste
Pre-heat oven at 375F
In a large bowl, combine washed cauliflower florets, melted coconut oil, nutritional yeast, sea salt and pepper; spread the mixture onto a parchment lined baking sheet.
Roast for about 40 minutes or until golden crisp, stirring occasionally.
This is so delicious; you might want to double the recipe!
