With so much fresh zucchini from my “gardener extraordinaire mother-in-law” (Italians: they know how to grow a beautiful garden!), tonight’s pasta dinner is made with zucchini noodles.
With a vegetable spiralizer, it takes a few minutes to make fresh noodles and the kids LOVE the process!
Simply heat a couple of teaspoons of coconut oil (olive oil is more fragile and should never be heated at high heat), add a bit of diced red onions and garlic (I love garlic!), cook for a few minutes until you can smell the onion and garlic, add the zucchini noodles and cook until tender. Add a bit of water if necessary, and sea salt/freshly ground pepper to taste.
Serve with your favourite tomato sauce and top with goat feta cheese, nutritional yeast, cashew cheese, or fresh Parmesan cheese. These also go very well with an avocado cream sauce
